Mel-O-Cream proof boxTo allow the yeast in yeast-raised donuts to work, the donuts must rest in a temperature and humidity controlled environment. We use a continuous proofing system that allows us to precisely control these conditions.

The donuts are placed on a conveyor that follows an up and down pattern as shown. This conveyor configuration allows us the necessary rising time without taking up too much floor space.
